When You Still Don’t Like Eating Your Veggies as an Adult: A smoothie recipe

I’ve always regarded with suspicion anyone who claims fruit masks the taste of greens when you put them in a smoothie. This week’s recipe, however, proved me wrong.

Green smoothies

I’ve mentioned in this newsletter before how much I detest eating my greens. Frankly, I do not like eating leaves; I’m not a giraffe. As the fearless leader of the culinary sector of the Di Bella household, Vinnie constantly blows me away with the clever ways he gets me to eat leafy greens. Most recently, he came up with a a new breakfast smoothie.

Below you will find the recipe for our breakfast smoothie 2.0. Spoiler alert: it has spinach in it. I have seen people put green leafy veggies, like spinach and kale, in their smoothies for year. Naturally, I’ve regarded this practice with suspicion.

However, I will be the first to admit that I was wrong to hesitate. Don’t let the green color fool you! The mango and strawberries in this smoothie are sweet enough that you actually can’t taste the spinach at all.

Smoothie 2.0 Recipe

Ingredients:
  • 3/4 cup frozen mango slices
  • 3/4 cup frozen strawberries
  • 1 whole banana (we use frozen)
  • 1/2 cup kefir
  • 1 cup milk (we use almond)
  • 4 ice cubes
  • 1 scoops vanilla protein powder
  • handful of fresh, clean baby spinach

Place ingredients in blender and blend until combined. Recipe feeds two adults.

In experimenting with the recipe, Vinnie unintentionally made double the amount of smoothie we needed. We poured the remaining smoothie into single portion bowls and popped them in the freezer. This made for a delicious frozen treat later!

Happy Hour Workout
