Why Greens?

Does anyone else have trouble incorporating greens into their diet? We definitely struggle with it. Unfortunately, after a recent conversation with a friend about the ways Vinnie has to modify greens in order to essentially sneak them into our diet, I have recently come to realize I am the problem.

I just don’t really like greens. By “greens,” I mean green vegetables. And I don’t really think I’m the only one who doesn’t particularly enjoy eating their veggies.

I grew up in a house where we ate a ton of leafy green salads. And then when I moved out, I heartily embraced the “now that I’m an adult I can eat ice cream whenever I want” mentality and leafy greens quickly fell to the wayside.

Then you already know the ways Vinnie transformed my diet once he became my partner. Unfortunately, green veggies have been somewhat of a sticking point for us. I just don’t like eating leaves, I am not a giraffe.

So anyway, because Vinnie and I are both very stubborn about things sometimes, he has done a fabulous job of developing ways to get me to eat greens. Why? Because greens are good for you! And they make up an essential part of a healthy, balanced diet (just like Mom always said).

Greens are packed with important nutrients like iron, fiber, potassium, calcium, and magnesium. Eating a green-rich diet can even help prevent certain cancers. So, whether I like it or not, greens have to be a regular part of our diet. Luckily we have Vinnie to keep them interesting!

Don’t Kale My Vibe…

Kale is one of those “super foods” that everyone (Vinnie) is always telling me to eat. It’s also one of those foods that make me feel like I’m Little Foot in The Land Before Time. So eating kale salads isn’t really in option in our house. We have found, however, that kale is delicious when cooked. Below you’ll find a recipe Vinnie made recently that provides a yummy way to get kale into your diet:

Ingredients:

  • 1.5 lb sweet Italian sausage
  • 1 pint cherry tomatoes, washed
  • 1 bunch of kale, washed
  • 6 oz of crumbled feta cheese
  • olive oil (for drizzling)
  • balsamic vinegar (for drizzling)
  • salt
  • pepper
  • 1 lb noodles
  • water for boiling

Drizzle oil in saut√© pan and heat on medium. Brown sausages in pan. Simultaneously start water in pot to boil on a different burner — add a pinch of salt to water. Once the water comes to boil – add noodles and cook to preference.

Once sausages are brown on all sides, remove from pan and cut into even rounds.

Add sausages back to pan. Rip chunks of kale leaves off their spine and place in pan with sausages. Add tomatoes. Drizzle with the “good stuff” (aka balsamic vinegar). Cook until kale and tomatoes become soft, stirring occasionally.

When noodles are ready, strain and add to pan. Top with feta cheese. Toss occasionally until cheese starts to melt.

Once the cheese is just starting to melt, remove from heat and serve!

Feeds 4 adults.
